醋酸肉桂酯为无色或略带黄色液体。沸点265℃，145-146℃（2.0kPa），139-140℃（1.33kPa），114℃（0.133kPa），相对密度1.0567（20、4℃），折光率1.5425。闪点110℃。醋酸肉桂酯易溶于乙醇、乙醚，几乎不溶于水和甘油。有温和甜味的花香。
